Costa Rican Bromatology: Hacking the Casado

Costa Rican cuisine (Gallo Pinto, Picadillos, Olla de Carne) is nutritionally rich but historically unbalanced. The typical local diner (soda) plate contains 70% carbohydrates (starch) and barely 15% protein. After bariatric surgery, this ratio causes extreme fatigue, insulin spikes, and stalls fat burning.

Every meal must be designed under the inverse proportion: 70% Lean Protein, 20% Fiber (Cooked vegetables), and strictly 10% Carbohydrates (Complex starches).

Olla de Carne (Beef Soup) Excess of heavy tubers (cassava, taro), very fatty broth. Let the broth cool and remove the white fat layer. Serve shredded lean beef and a single carbohydrate (e.g., a piece of taro).
Casado (Fish) Breaded (Guaranteed blockage), salads with mayonnaise. Grilled Sea Bass/Mahi-Mahi fillet (zero oil). Fresh green salad with drops of lemon.

Avoiding Dumping Syndrome (Blood Pressure Drop)

"Dumping" occurs when a meal with a high glycemic index (high sugar or simple carbohydrates) suddenly dumps into the small intestine because the stomach valve has been modified. The body panics and sends all the blood to the intestine.

Dumping Symptoms

  • • Sudden tachycardia (20 to 30 mins after eating)
  • • Cold sweats and weakness in the legs
  • • Imminent feeling of fainting and nausea
  • • Abdominal cramps and explosive diarrhea

Protective Shield

  • • Start EVERY meal curbing hunger with protein.
  • • Never drink fruit smoothies (pure liquid sugar).
  • • Chew each small bite at least 20 times.
  • • Eliminate added sugar and trans fats for 12 months.

Tolerance is Individual

No stomach heals the same way. What your surgery partner tolerated at month 2, you might tolerate at month 4. Pain when eating is not normal; if you feel pressure or tightness, stop immediately. Return to the previous phase (soft foods) for 48 hours and try again.
